We’re Back!

We were delighted to once again open our doors and welcome our wonderful customers back. Let’s hope that is the only pause in time for now. We hope you are all safe and well and enjoying spending time with us here at Tigerlily as much as we are enjoying seeing you all. Behind the scenes at Tigerlily we have been using this time to refine our service and bring you all a bright, happy and safe experience combined with a couple of old classics still featuring on our menus alongside a selection of fantastic new drinks, cocktails and dishes for our lovely regulars, new faces and visitors to our beautiful city, let us know what you think!

We welcomed new team members, with particular acknowledgement to Emma our fantastic Head Chef the driving force behind our wish to bring you the best fresh and local produce. Emma is truly passionate about our menu, it’s source and preparation and hopes you will take time to try the ‘Bites’ section of our menu which offers a range of ‘In-House’ created dishes. Particular highlights include the Duck & waffle with cherry gel, Scottish crab French toast with pickled cucumber and House made ricotta served with Scottish honeycomb and artisan crisp bread. Many of our ingredients are locally sourced to ensure our customers receive the freshest dishes around. We managed to grab a minute with Emma to find out more about the focus behind the new summer menu:

What do you feel is the core focus and drive behind our summer menu?

“Locally sourced ingredients, in-house development and preparation of our dishes and the craftmanship that goes into creating the unique and delicious flavours for the new menu.”

Re-opening allowed us to work on new elements for Tigerlily from our spectacular rose flower display by Wild Flowers to our delicious afternoon teas many parts of the Tigerlily ‘foundations’ have had some tweaks and changes made! If you haven’t had the chance to try out our new Afternoon Tea now is the perfect time, pick a rainy Sunday in Edinburgh, come along and take shelter in the spectacular surroundings of Tigerlily.

We caught up with Pauline our Pastry Chef to ask her what ‘buzz words’ come to mind when asked about the Tigerlily afternoon tea, Pauline replied “Glamorous, unique, one of a kind and very colourful! Oh and don’t forget to try the carrot cake and scones, they really are delicious…we don’t have scones in France so this is very new to me!”

If you are familiar with Tigerlily you will know we love innovative cocktails- you name it, we are trying and testing it! Over recent months the team has grown harbouring a wealth of experience, flare and talent to the Tigerlily bar team.

Despite the bustle of a busy Wednesday afternoon for ‘Eat Out to Help Out’ we caught up with Ryan our Bar Manager to find out more.

Which part of the new menu are you most excited about and is there any key cocktails you feel our customers should be trying?

“I’m most excited about the ‘Porn Stars Paradise’ section of the menu. When I took the role as Bar Manager I wanted to try and bring some exciting flavours and techniques to the menu whilst still keeping the drinks relatable to the clientele.

Our bestselling cocktail is by far the classic Porn Star Martini. The idea was to take a few other classic cocktails and a couple of different techniques and mix them all together. When you are selling 27’000+ Porn Star Martini’s a year, you know your clientele must be enjoying the flavour profile so why not create an entire section of the menu based around they flavour combinations.

My personal favourite on the entire menu is the ‘Red Velvet Negroni’. A classic Negroni is placed in a sous vide bag with Red Velvet Cake and tonka bean. This is then sat in the water bath at 60 degrees for 4 hours then strained off. We top this off with a delicious tempered white chocolate, tonka bean and freeze-dried raspberry shard.” -Ryan Snedden

Another addition to the team is the lovely Calvin our Assistant Bar Manager, we caught up with him to find out more about his experience before working at Tigerlily.

Calvin, how long have you worked in the industry for & what made you choose Tigerlily?

I’ve worked in bars since I was eighteen, a happy accident we can call it! My first ever job was in Candy Bar on George Street, my most recent role before returning to Tigerlily was in Paris at @littlereddoorparis. I felt confident when coming back to Tigerlily as it’s a fantastic venue to work in alongside my close friend and Bar Manager Ryan. Every day is hands on for learning and experience. -Calvin Politi

Ryan, before Tigerlily where else have you worked & can you tell us a career highlight?

Prior to working at Tigerlily I was working at Lucky Liquor in Edinburgh. Previous to that I was living in London and Australia working in Hawksmoor Spitalfields, The Lobo Plantation and PS40.

A career highlight would probably be traveling to Tasmania, Australia spending a few days in visiting Bruny Island to compete in the Final of the Hendricks, Hot Gin Punch competition. I won the final and that combined with just how breath taking the trip was is something I will always be grateful I was able to be a part off! -Ryan Snedden
